Marinated Green Beans

green-beans-935783-mI tried another vegetable recipe recently. I took on dressing up our green beans in a healthy way.  I have to admit it was good but then I made a decision that messed up my yummy green beans.

 Ingredients:

  • Fresh green beans
  • Mrs. Dash Lemon Pepper Seasoning
  • Clove of garlic
  • 2 Tablespoons of plain Greek yogurt
  • 1 Tablespoon of lemon juice

Directions:

  • Steam FRESH green beans, with a touch of Mrs. Dash Lemon Pepper Seasoning and crushed garlic clove.
  • Mix Greek yogurt and lemon juice together.
  • Be sure not to overcook the green beans. The beans should be crisp. Once the beans are cooked place them in a bowl that has a lid. Pour the yogurt mix into the bowl. Place a lid on the bowl and shake just enough to mix the yogurt in well with the green beans. Let beans sit covered until ready to serve. The longer they sit the better they will taste.

While the rest of dinner was cooking I tasted the green beans and they were really good. However, I made a horrible mistake when I decided to toss them in the microwave to reheat them for a few minutes before serving. They were fine being warm. The extra heat caused the yogurt to separate. While the beans were still edible they were not as good as the bites I snuck before dinner was ready.

If your family is tired of the same old plain green beans this just might be an easy, healthy way to dress them up and make them a little different.
