My family and I have started getting tired of eating the same old vegetables prepared in the same old way. So I decided to try something new this week.
David and I like asparagus, the kids wish I would forget that they exist. I make them about once every two week, usually with some kind of broiled fish. I love hollandaise sauce on asparagus, but it has so many empty calories. I tried to find a healthy version of hollandaise sauce but was unsuccessful. I also looked for a sauce that was all natural or organic, and could not find one. Since we are trying to limit additives in our food I decided to play around and see what I could create. The goal was to find something tasty and healthy.
I have seen a lot of recipes using greek yogurt in place of mayonnaise and sour cream. I thought I would give it a try.
Ingredients
- 3 tablespoons of plain greek yogurt
- 2 teaspoons of lemon juice
- 2 teaspoons of butter
- 1 fresh garlic clove crushed
Directions
- Place asparagus in a small roasting pan or bread pan. Roast for about 15 minutes at 350 degrees.
- Melt butter in microwave. Be careful not to scorch the butter.
- Mix yogurt, lemon juice, and crushed garlic in with the butter.
- Pour yogurt mixture on top of asparagus and roast for another 15 minutes
Next time I make this I am going to leave the butter out, just to see if I can make it a little more healthy. My kids really enjoyed this recipe and I did not have to fight them to get them to eat their asparagus.
